  1. Prepare rice according to package.
  2. Peel and slice cucumber. Remove avocado from outer layer and slice.
  3. Drain tuna (or crab) to remove excess water.
  4. In a medium bowl, toss cucumber, vinegar, and salt.
  5. In a seperate medium bowl mix tuna/crab, mayonnaise, and sriracha.
  6. After rice is done. On a bamboo mat, lay 1 nori sheet. Using dampened hands, spread 2/3 C rice evenly across 80% of the nori, leaving an uncovered border at the end furthest from you.
  7. At the end nearest to you arrange 3 Tbsp. of tuna/crab all the way across.
  8. Top tuna/crab with strips of cucumber and avocado.
  9. Lift the bamboo mat from the end closest to you and use it to guide edge of rice inot a tight spiral. Squeeze firmly along the mat to compact roll. Continue rolling in a spiral log to seal the edge. Repeat steps 6-9 with remaining ingredients.
  10. Let roll sit for 10 minutes before slicing.
