Firecracker salmon
Ingredients
- 2 lb. salmon
- 1/2 tsp. kosher salt
- 1/4 tsp ground black pepper
- 1/4 cup brown sugar
- 3 cloves garlic minced (3 tsp pre-minced garlic)
- 3 Tbsp. sriracha
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. lime juice
- 1 Tbsp. soy sauce
- 2 tsp. paprika
- 1 tsp. gratted ginger
- 1/2 tsp crushed red pepper flaked
- 1 scallion, chopped (can use white part of green onion)
Directions
- Preheat oven to 350°F. Line a large baking sheet in foil and coat with cooking spray.
- Arrange salmon skin side down on prepared sheet. Season flesh side with salt and black pepper.
- In a medium bowl, whisk brown sugar, garlic, sriracha, oil, lime juice, soy sauce, paprika, ginger, and red pepper flakes.
- Coat flesh side of salmon with brown sugar mixture.
- Bake until salmon is cooked through, 20 to 24 minutes.
